Stagiaires: a Unique Opportunity in France This Summer!

La Maison du Chapitre in Monpazier, France, is seeking two stagiaires:  one bread baker (boulanger) and one pastry chef (pâtissier), to work with our team for the busy 2018 summer season.

We are a boulangerie/pâtisserie/salon de thé located in a small medieval village in the southwest of France. Our breads are made with natural levains and the best flours from small local mills. Long fermentation, hand shaping, and extreme attention to all details have made us well-known for great bread in the region. Our pâtisserie is a mix of the great French classics (millefeuille, Saint Honoré, baba, opéra, to name just a few), modern takes on mousse entremets, and American classics such as cheesecake, brownies, and cookies.

The ideal candidate for both positions must have experience either from baking/culinary school or previous jobs in the field, preferably both. Only serious applicants with impeccable references will be considered, as you will be an integral part of the production team, not an intern relegated to washing dishes and sweeping the floors. Fluency in French is not necessary, as both your bosses speak English. However, the staff does not, so it would be beneficial for you to learn some basic French before arrival and to be open to learning and practicing while here.

A stage is for at least 6 weeks, starting at the beginning of July and running until the end of August, with a possibility of extending to September. This is an unpaid position; however, housing is provided, and upon successful completion of the stage, we will reimburse half of your airfare up to $1,000. You will work 35 to 40 hours per week, usually starting at 5 am, earlier on busier days. You will have at least one day off per week, potentially two, depending on the size and qualifications of the rest of the production team. No special visa is required. The closest airports are Bordeaux and Toulouse.

Please Google “Monpazier” before applying. Our small village is very charming and located in a beautiful region that is nowhere near Paris, which we know is normally a huge attraction for Americans. We are two hours by car from Bordeaux and two and half from Toulouse. The area is rich in medieval history and prehistoric caves, and a natural playground for those who love cycling, mountain biking, and walks.

This is an incredible opportunity, which to my knowledge does not exist in France. If you love bread baking or pastry, have an adventurous spirit, and are willing to work hard, we are offering you an opportunity to learn and gain experience that will set you apart from the rest, as you start or continue your career in the US.
