Description

This is a recording of a class that originally took place on April 19, 2023. Beyond the Bench: Alternative Bakery Business Models, presented in partnership with the Retail Bakers of America, explores different approaches to building and operating a successful bakery business. The panel features bakery owners and leaders who have chosen alternative models. Through their experiences, the discussion examines how different business models can support work-life balance, sustainable livelihoods, and employee ownership. ABOUT THE PANELISTS Daisy Chow, Founder and owner of Breadboard Bakery in Arlington, Massachusetts, built her bakery from a pop-up into a brick-and-mortar business using a pre-order model and limited retail hours. Brandon E. Chrostowski is Founder, CEO, and President of EDWINS Leadership & Restaurant Institute. He has created a social enterprise that provides culinary and hospitality training, employment, and support services to formerly incarcerated individuals. Christian Garcia is Lead Baker and employee owner at Proof Bakery Cooperative in Los Angeles. He has been part of the worker-owned bakery for more than five years and brings a passion for baking, collaboration, and serving his community through food. Donna Sky, Business Engagement & Partnership Manager at Project Equity and founder of Love & Hummus Co., is a longtime social entrepreneur who grew her mission-driven food business into a nationally recognized brand focused on social and environmental impact.
