Description

This is a recording of a class that originally took place on July 1, 2021. Capture the flavors of summer all year long by learning the fundamentals of fruit preservation and jam making. Whether you're looking to expand your pastry menu or add seasonal flavor to your favorite baked goods, understanding how to preserve fruit opens up endless creative possibilities. In this demonstration, pastry chef Andrea Quillen shares the core principles of fruit preservation, seasonal infusions, and jam making, then demonstrates a variety of baked goods that showcase homemade preserves. You'll leave with practical techniques and plenty of inspiration for bringing the taste of summer into your bakery year-round. ABOUT THE INSTRUCTOR Andrea Quillen is the pastry chef at Minifactory in Bristol, Vermont, where she developed the café's pastry program around seasonal Vermont produce and locally made preserves. Previously, she served as Head Pastry Chef at King Arthur Baking Company and has baked professionally in the United States, Scotland, and Slovenia. Her work celebrates seasonality, thoughtful craftsmanship, and creative pastry. You will receive access to a private YouTube link. This is an unedited recording of a live webinar originally offered via Zoom. You may watch it at any time and as many times as you like, but you may not share the link or distribute any part of the video or audio.
