    Olde Hearth Bread Company is a locally owned family bakery.  As the first artisan bread company in Central Florida, we have played an integral role over the past 25 years in developing the thriving culinary scene that exists in Orlando today.  Our breads and pastries are baked fresh daily for wholesale customers that includes restaurants, hotels and up-scale groceries. We provide a positive fun environment with opportunities to learn, grow, and contribute.

    We are seeking an experienced Head Baker with exceptional baking skills, who is highly organized, detail-oriented, level-headed, able to multitask and possesses the skills required of an effective manager of bakery staff.

    The Head Baker/manager is responsible for the production of superior quality artisan and commercially baked products consistent with prescribed company formulas and standard procedures.  Since daily deadlines have to be met, the candidate must have experience with production and baking schedules.  As manager, you will be responsible for overseeing the entire production and will perform your duties in a conscientious, team-oriented manner insuring a safe, clean working environment.

    The right person for the position of Head Baker position will:

    • Work collaboratively with management while leading a team of workers.
    • Be able to work 8-10 hours a day including nights, weekends, and holidays.
    • Be an effective communicator who listens and respects others point of view.


    • Lead a team of bakers as they prepare a variety of recipes to spec each day, focusing on quality, consistency and meeting production schedule
    • Assist in the implementation and management of cost control procedures
    • Train new employees and existing staff
    • Participate with the evaluation of staff employees.
    • Assist in developing and managing labor schedules for the bakery
    • Help develop new recipes and innovation in the bakery
    • Manage the storage and handling of ingredients/supplies and assist in maintaining an appropriate inventory
    • Supervise the flow of production and demonstrate proper techniques or assistance when needed.
    • Train staff to operate equipment according to proper sanitation and safety standards.

    Position Requirements:

    • Minimum 3 years’ experience as a baker in an Artisan bakery.
    • Minimum 2-year experience as a manager in a bakery.
    • Have endurance to work hours needed to complete production.
    • Must be able to lift 50# without assistance.
    • Basic math skills and understanding of baker’s math
    • Must have knowledge of bakery equipment-mixers, ovens, dividers, molder
